Festive Bite-Sized Treats: Ways to Utilize Christmas Leftovers into NYE Appetizers
What types of bite-sized appetizers can I prepare for New Year’s Eve using my Christmas remaining food that will still impress guests?
Finger food needn't be elaborate, so New Year's offers a great opportunity to clear the decks. The key rule is to keep things to just one bite—no one wants to manoeuvre a fork. Guests just want a comforting taste of comfort food with a luxurious touch.
Should you possess a bit of cured fish left, layer it on blinis and crown it with affordable roe. Mini fishcakes are also just the ticket: If you have remaining fish or flaked salmon, mix it through creamy potatoes, combine with fresh herbs, lemon, and caramelized onions, then coat in Japanese breadcrumbs and deep-fry.
You could also get creative with Spanish croquettes. Prepare the white sauce a few days ahead, then use leftover ham, chicken, or foraged fungi for the filling. Whizz old bread into crumbs to cover them, then fry. Savoury pastry mixtures are another perfect use for those breadcrumbs, or use them as a coating for bite-sized chicken. For flavour, all you need a bit of citrus zest and thyme, and they'll sing so much more. Incidentally, croissants make excellent coatings, too.
One beloved treat at this time of year is a post-holiday sandwich, and that doesn't have to stop after Boxing Day. Place some ham and turkey in an airtight container and store in the freezer. While you're at it, reserve some cranberry sauce and honey ham glaze in the refrigerator. When needed, defrost the meat, then pop it in a preheated oven with the saved glaze for a brief period. Let it cool and slice thinly, then lay on top of some sourdough and start building mini sandwiches with lots of cranberry sauce. Slice into bite-sized pieces for a surefire hit.
Leftover turkey, meanwhile, could be turned into a spicy, crisp salad. There’s always a bit of turkey leg left over, and it's ideal for something punchy. Shred the meat, then crisp it slowly in a pan, and mix with remaining sauce thinned with lime juice, a spoonful of soy sauce and a little spicy oil. Garnish with fresh herbs and some green onions, and serve in little gem leaves.
Transforming Leftover Vegetables
Vegetables, meanwhile, can be dressed up and fit for a party with a big batch of bubble and squeak. Combine all your leftover veg with fresh herbs, then add salt and pepper and incorporate flour. Cut out portions to about the size of small rounds, then keep in the freezer. Reheat in a preheated oven for a short time and top with your choice of topping—perhaps roast beef and sharp horseradish. A good tip, though: set some aside for brunch the next day.
